The Senese countryside admired, photographed, and visited by tourist from all over the world, owes much of its fame to the art of sheep farming. How else could it have been possible to keep the overgrown fields under control if it were not for the flock of sheep that regularly "cut" them like an army of yardmen. How could we have dealt withe their upkeep without those dry walls made by the shepherds to delineate the properties. This spectacular landscape did not magical apper out of thin air, but is a product of man farmers and sheep.

We will visit farm Il Casale during the visit we will take a stroll through the fields, vineyards and sheep stables. offer a behind-the-scenes look at the fine art of cheese making. We will the entire production process from milking to ageing. Then we would go in the stunning view of Val d’Orcia from our terrace if the weather is nice, where all of the products served are explained so that you can truly enjoy feasting on 8 different types of raw milk cheeses, homemade bread and extra virgin olive oil from our own trees. Podere Il Casale cheesery has won several awards in the organic sheep and goat raw-milk cheese category.
